Do any platforms let you sell $xx amount of stock every time it increases by $xx in value?

For example, sell $10 of amazon every time my amazon stock goes up $100 ?

I want to have a profit taking strategy that is set and forget but that doesn't result in my totally exiting my position. I am looking at fidelity and it seems like I would have to define one conditional sell order per interval I want to sell at.

Is what I describe called a bracket order?
